We hand craft fresh masa made with Bow & Arrow’s heritage blue cornmeal and fill with organic zucchini, charred chayote squash, Crimini mushrooms, black beans and a spoonful of red chile sauce made from scratch. Just before wrapping, we melt in Miyoko’s Smoked Farmhouse artisanal vegan cheese. Steam these up hot and top with our tangy tomatillo sauce for mouth watering nourishment morning, noon, or night.

To warm, remove cedar plank. Loosely wrap tamales in cheesecloth; transfer to a saucepan.

Add four tablespoons water and cover.
Steam over low heat for eight minutes or until water evaporates. Let rest for two minutes before removing tamale husks. Top with cool salsa verde.
